Paleo Pistachio cake

For the last 2 weeks I have been looking for an outstanding recipe for pistachio cake. I love this cake because the two pistachio cakes that I tried previously were absolutely amazing even though both of them looked more or less like simple cake slices . Nothing fancy but the taste was big and generously packed with pistachios ( a little credit must go to ‘Rose Bakery’ in Paris and ‘La Fromagerie’ in London).

I have found many good looking pistachio-cake recipes on ‘Pinterest’ however I could not find similar looking cakes to the two that I enjoyed overseas . So I googled pistachio ‘loaf’ instead of ‘cake’ and this time found a five-starred recipe called ‘Paleo Zucchini Pistachio Bread‘


Because I could not find what I really wanted , I decided to try something else . This is also a special diet recipe and the ingredients could not be healthier. To begin with there was no sugar .... Some of the other ingredients were quite uncommon so I substituted them with something I already had. I replaced the recipe’s tapioca starch with self raising flour, chia seeds with coriander and fennel seeds, I used coconut oil because I did not have avocado oil and cow milk 🐮 instead of almond milk 🥛...

I am not sure if my version was still ‘Paleo dish’ after I changed a few things but it turned out as colourful with good crumbling and was as moist as the picture from the original recipe . The taste was a little too complex for me but I believe it is one of those dishes that is packed with good nutrients . PS.. I now understand that the paleo diet is free from daily products , legumes , sugar and grain . The type of food that might have been eaten during the Paleolithic era, which dates from approximately 2.5 million to 10,000 years ago.
