Bouchon’s Scones

This time I followed Bouchon’s recipe for scones . I was curious to see how chef Thomas Keller ( American ) and his colleague chef Sébastien Rouxel (French ) interpreted ‘scones’ .

I am not a big fan of scones and never quite understand why it has always been such a big thing . The ‘forever star’ of English afternoon cream tea and for such a long time, I assumed that scones were English. I was pretty surprised to find out from Wikipedia that scones originally came from Ireland.


My husband , Andy, tasted my French & American scones 2 days ago and simply said it was alright but it did not taste like the ones from The Mandarin Hotel .....( not sure why he compared a housewife’s home made scones with a 5 star hotel. ) Andy said the texture was not fluffy and it was too crumbly for him... He sounded like a hard judge who already had the recipe for the ‘perfect scone’ and anything else that was different from his expectation would not be ‘quite right’.


I decided not to be discouraged and wanted to find out how other people would rate this recipe. So this morning I baked the rest of the frozen scones. This recipe is great because you can make a whole batch of 12 scones and keep them in the freezer for up to 1 month . I brought some over to the studio for my customer who was coming to pick up her Royal Copenhagen mugs that she had ordered . It was supposed to be ‘a mini coffee session’ with my customer and two of her childhood friends . I set up a tea table and was ready to serve scones and Bouchon at 2:30 pm.

( *The credit goes to Bouchon Bakery cook book. I prefer to use round cookie cutter instead of cutting them into either rectangular or triangular shapes as suggested in the book. ) The three Hong Kong lady customers were very nice and interested in our operation. They loved the scones and the Bouchon . One lady does baking herself and thought the scone was delicious . The second lady has been on a ‘no sugar diet ‘ for some time but today she had a change of mind and ate both . The third lady enjoyed a second scone even though they are rather large ( 3 inches diameter ). She also took 3 more pieces of Bouchon home for her son . At the end of the day, remember that not everyone is on your side when it comes to scones. Please yourself and if some other people like what you do, that is a big bonus.
